In 1988 At The Tender Age Of 19, George A. Veloz II And His Wife Mitsy Were Offered An Opportunity To Move From Midland, Texas To Manage His Father's "Burrito Stand" Located In Amarillo On Amarillo Boulevard. George Had Some Experience Working In His Father's Restaurants In Midland; There Was The Monterrey Cocina Mexicana Cafe And Jorge's Cafe.Mitsy Worked As A Waitress At Tampico Spanish Inn (A Competitor, But Family Related). They Had The Perfect "One-Two Punch". He Cooked And She Served. The Cafe Served Mainly Burritos And Seated Only 20 People. In The Beginning, Sales Weren't There And Making Enough To Cover Expenses Was A Challenge. Their Memories Of Standing At The Large Windows And Hoping For Customers To Discover Them Are A Humble Reminder Of The Value Of Patrons. They Began To Lament Over The Decision They Had Made. After Doing Some Soul-Searching, They Decided To Make Some Menu Additions And A Lot Of "TLC". The Business Grew At A Phenomenal Rate. In 1992, T he Young Couple Went Sole-Proprietorship And Began Looking Into Purchasing The Cafe From George's Parents. The Demand For More Occupancy Sent George In Search Of A Bigger Boat, Hence The Ross Location. Tacos Garcia Became A Corporation In 1993 And Began Serving At Ross Soon After. Five Years Later They Experienced Some Major Growing Pains And Research Into A New, Larger Location Began. After A Lot Of Praying, A New Home Became Reality In The Summer Of 1999.
